The extraction of heat, odours and fumes in commercial catering constitutes a major demand for energy. This energy demand is increased further with large quantities of air being lost to the atmosphere and replaced unnecessarily by inefficient ventilation systems.
The latest panel we use is equally at home on either a new build or retro fit solution and works by controlling ventilation fan speeds based on the amount of equipment being used at any given time hence optimizing energy use.
The on demand system works with Optical Sensors detecting smoke and steam and heat either in the Duct or in the Canopy, this will then operate the Fan accordingly.
Variable speed invertor drives are required for the control of the extract and supply fans. In commercial catering zones our panel controls these drives effectively and efficiently to minimise energy usage.
The on-demand panel will also monitor carbon dioxide and carbon monoxide levels and control of ventilation to keep the operators safe, This is a requirement when using Solid fuel appliances in Besa DW172
Controlling the extract and supply fans together ensures that they run at the lowest speed possible and increase up only when cooking occurs, minimizing energy usage whilst maintaining comfortable and safe working conditions.
